Bitter melon contains a chemical that acts like insulin to help reduce blood sugar levels.
We are going to prepare an Okinawan dish, Goya Champuru, which is a great recipe for hot summer days. Eggs, onions, tofu, pork and bitter melon are cooked with miso seasoning! This will help you cope with the summer heat!
INGREDIENTS
1 bitter melon (goya) difficult to find in France, 250 g /8.8 oz for 2 people
1 teaspoon salt to soften the bitterness of bitter melon
150 g onions
100 g slices of pork shoulder
1/2 teaspoon soy sauce
1/2 teaspoon sake
2 eggs
salt
pepper
1/2 block firm tofu 200 g /7.1 oz for 2 people
Katsuobushi (bonito shavings)
2 tbsp cooking oil
seasonings
2 tbsp miso
1 tablespoon sake
1/2 tablespoon sugar
1 teaspoon soy sauce
INSTRUCTIONS
1. Prepare the ingredients for the goya chanpuru. Cut the bitter melon (also called goya) in half lengthwise.
2. Remove the seeds and scrape well with a spoon.
3. Remove all the thin layer of white flesh.
4. Cut into 5 mm (0.2 inch) slices.
5. To soften the bitterness of the melon, mix the salt with the bitter melon.
6. Leave to sit for about 10 minutes and allow to drain.
7. Wash the bitter melon under running water and dry it well with paper towels. If you like bitterness, you can forget about salting.
8. Cut the onion into 1 cm (0.4 inch) quarters.
9. Drain the firm tofu and remove excess water. Wrap the tofu in paper towels and heat it in the microwave for 1 minute.
10. Let it cool and wrap the tofu with a new paper towel. Let it sit for a bit and then squeeze out the excess water with the paper towel.
11. Remove the paper towel and cut the firm tofu into 1 cm (0.4 inch) slices.
12. Prepare the egg mixture. Break 2 eggs into a bowl and beat them well. Add salt and pepper and beat the egg mixture well.
13. Season the pork. Cut the pork slices into 3~4 cm (1.2~1.6 inch) pieces.
14. Add the sake and soy sauce. Massage the pork with the seasonings.
15. Mix the condiments for the goya champuru. Add the sake, sugar and miso soy sauce. Mix it well until it becomes a smooth paste.
16. Pre-cook the egg mixture and firm tofu. Add the oil to a pan and shake it to oil it well. Check if it is hot enough and pour the egg mixture into the pan.
17. Mix quickly and transfer it to a bowl when it is still half cooked.
18. Oil the pan again. Add the sliced tofu and brown them.
19. Flip the tofu. Brown and transfer the firm tofu to a bowl.
20. Cook the goya champuru! Oil the pan. Add the pork and brown on both sides.
21. When the pork is almost cooked, add the onions. Mix and continue cooking.
22. Add the sliced bitter melon and mix well.
23. Add the sliced firm tofu. Pour in the condiments and continue to mix.
24. Finally, add the egg mixture to the pan.
25. Mix well.
26. Serve the goya chanpuru on a plate and garnish it with the dried bonito shavings.
