Simple Water Spinach and Garlic Stir Fry

Simply tossed in garlic and oyster sauce, this classic Vietnamese vegetable side dish goes wonderfully with steamed rice.


Ong choy, also known as water spinach or morning glory, is a popular leafy green vegetable in many Asian cuisines, especially in Southeast Asia. It's known for its crisp texture and mild flavor. Here's a simple stir-fried ong choy recipe that you can try:

  1. Prepare the Ong Choy: Wash the ong choy thoroughly under cold running water. Drain and cut it into manageable lengths, usually about 3 inches long.

  2. Blanch the Ong Choy: Bring a large pot of water to a boil. Add the ong choy and blanch it for about 1-2 minutes. This helps to remove any bitterness and wilts the leaves slightly. Drain and set aside.

  3. Heat the Oil: In a wok or large skillet, heat the vegetable oil over medium-high heat.

  4. Add Garlic and Chili: Add the minced garlic and sliced red chili peppers (if using) to the hot oil. Stir-fry for about 30 seconds or until the garlic becomes fragrant and slightly golden. Be careful not to burn it.

  5. Stir in Ong Choy: Add the blanched ong choy to the wok. Stir-fry for 2-3 minutes, tossing the vegetables with the garlic and chili.

  6. Add Sauces: Pour in the oyster sauce, soy sauce, and sugar. Continue to stir-fry for another 2-3 minutes or until the ong choy is tender but still vibrant green.

  7. Season to Taste: Taste the ong choy and adjust the seasoning with salt and pepper as needed. Keep in mind that oyster sauce can be quite salty, so you may not need much additional salt.

  8. Serve: Transfer the stir-fried ong choy to a serving plate and serve hot.

Enjoy your delicious ong choy stir-fry as a side dish with rice or as part of a larger meal. You can customize the level of spiciness by adjusting the amount of chili peppers you add or by leaving them out entirely if you prefer a milder dish.
